Celery Pickles

well it is not a usual vegetable to pickle in your neighborhood but it is a must try let me tell you!

 It goes great with coleslaw salad , burgers (especially the chicken ones) , it is amazing with fried chicken ,air-fried for me , deep fried food is not my think! 

It goes amazing with that cheese board on your cheese and wine dinner or raclette french parties . My guest usually enjoy it served on the cheese board nest to some pickled olives, dry fruits and some nuts.  

It is really easy to do , the secret lay in warm vinegar. So don’t just dump all those seasoning and ingredients in that jar cold. boil those babies! 

You can see from the video down here how easy it to do it ! and not o mention the benefits of having fermented food! so why not keep a varieties of them in your fridge to spice up your daily meals and at the same time enjoy the benefits of fermented food ! 

I live in a warm side of the earth , Dubai (pretty much warm yeah!) for that i keep all my fermented veggies in the fridge to preserve their crunch and taste and keep them way from molding but if you live in places less warm and with cold weather you can keep it in your pantry for sure !

Celery Pickles

unusual vegetable to pickle but it so delicious and easy to do and it goes amazing with your next coleslaw or air-fried chicken ! not to forget the benefits of fermented food you will be getting!
Servings 1 jar

Equipment

  • 1 clean glass jar with the cover

Ingredients

  • 10 sticks celery
  • 1 cup water
  • 1/4 cup brown sugar
  • 1 tsp whole peppercorn
  • 1 tsp mustard seeds
  • 1/2 tsp whole cloves
  • 1 tbsp flake salt
  • 1/4 cup apple cider vinegar

Instructions

  • start with bring the water to boil in a deep pan . add the sugar,salt and all the peppers and seasonings. add the vinegar and bring everything to boil. turn off the heat and set aside.
  • cut and clean the celery stick from the leaves . cut into 4 cm diagonal slices . wash a drain well from any dirt .
  • add the chopped celery in the clean jar and add the vinegar mixture to the jar and let it cool down completely before you close it well and let it set and a dark cold place for around 12 hours to give him an extra boost to ferment before storing it in the fridge door .

Notes

  • make sure you use a glass jar that is clean and sterilized.
  • if you live in a cool and cold place you can stores your pickles jars in your dark dry pantry.
  • after you open you jar it is better to store it in the fridge.
