I have been doing these air-fryer oatmeal breakfast muffins for Jeanna since she was 8 months old. I don’t know what took me so long to share it with you. Maybe it has to do with having to follow a toddler all day!

These air-fryer oatmeal breakfast muffins are a convenient and nutritious breakfast for your young ones and even for you.

these delicious muffins are gluten-free, refining sugar-free , flour-free , or oil-free.

I always like to have a healthy last-minute option for breakfast that I can grab whenever I’m in a hurry.

muffins generally are a good grab-and-go breakfast or snack. But the amount of sugar and oil found in most muffin recipes puts them in the junk food category.

I made so many versions of these muffins. they are easily customizable.

in this version, I added seeds but I also tried them with berries frozen or fresh. and with some apple or pears diced. Also, they go great with some chopped walnuts or almonds.  Simply replace the 1/2 cup of seeds in this recipe with your favorite berries, fruit, or nuts.

and you might ask why air-fryer? it is easier and safer for me to work with my air-fryer with a toddler all day with me in the kitchen. those air-fryer oatmeal breakfast muffins are very easy to make with minimal ingredients and in less than 20 minutes they will be baked and ready to eat. I prepare a big batch of those muffins and store in the freezer to use whenever you are in a hurry.

I use my air-fryer for many different recipes, it just makes my life way easier and healthier, if you can have a smaller air-fryer you can cook them in two batches. but don’t worry if you don’t have an air-fryer you can still make those delicious muffins in the oven, I mentioned all the details in the recipe bard below.

These air-fryer oatmeal breakfast muffins are a convenient and nutritious breakfast for your young ones and even for you. They are gluten-free made with no refining sugar, flour, or oil. And the perfect grab and go healthy breakfast or snack for your little one.

Equipment

Ingredients

  • 1 cup overripe mashed banana see notes
  • 2 large eggs
  • 1/3 cup date syrup see notes
  • ¾ cup milk see notes
  • 2 tsp vanilla extract
  • 1 ½ cup oat flour see notes
  • 1 cup rolled oat see notes
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon powder
  • 1 tsp ginger powder
  • ¼ tsp nutmeg grinded
  • ½ cup mixed seeds I used a mix of flaxseeds, sunflower seeds, hemp seeds and pumpkin seeds

Instructions

  • Preheat your air-fryer for 5 min on 160 C° while you prepare the muffins
  • In a deep big bowl mix the wet ingredients until smooth (egg, banana, date syrup, milk and vanilla extract)
  • Mix the dry ingredients (flour, oat, baking powder, baking soda, salt and spices) together in another bowl. add the dry ingredients to the wet ingredients mixture, mix and let the at flakes soak for 10 minutes.
  • Fold in ½ cup of the seeds mixture and mix it through.
  • Scoop the mixture into silicone muffins cups. Fill 2/3 of the muffins cup. Sprinkle some of the seeds mixed with some oat flakes on top. Press gently to they stick with the batter.
  • Arrange your silicone muffins cups in the air-fryer next to each other. Bake for 12 minutes until golden and skewer test come out clean.
  • Enjoy immediately or store for serving later, enjoy!

Notes

Banana: It usually takes 3 bananas to fill a cup but it depends on the size of the bananas. For that make sure you measure with a cup and always use overripe bananas.
Date syrup: you can use any other syrup of your choice (honey, maple syrup, agave syrup… ) and if you prefer not giving any syrup for your little ones, this recipe will still be naturally sweeten by the banana
Milk: you can use any kind of milk of your choice or what you prefer to choose for your little one. I usually prepare this recipe with organic grass-fed cow milk or some almond milk.
oat flour: you can easily make your own oat flour at home by pulsing some rolled oats until it’s flour consistency. And you can also replace with whole wheat flour.
Rolled oat: rolled oat is same as the traditional old-fashioned oat.
Oven version: you can totally prepare those muffins in the oven. Just follow the same instructions and bake them in a preheated oven 180 C° for 20 to 23 minutes.
