These air-fryer oatmeal breakfast muffins are a convenient and nutritious breakfast for your young ones and even for you. They are gluten-free made with no refining sugar, flour, or oil. And the perfect grab and go healthy breakfast or snack for your little one.
½cupmixed seedsI used a mix of flaxseeds, sunflower seeds, hemp seeds and pumpkin seeds
Instructions
Preheat your air-fryer for 5 min on 160 C° while you prepare the muffins
In a deep big bowl mix the wet ingredients until smooth (egg, banana, date syrup, milk and vanilla extract)
Mix the dry ingredients (flour, oat, baking powder, baking soda, salt and spices) together in another bowl. add the dry ingredients to the wet ingredients mixture, mix and let the at flakes soak for 10 minutes.
Fold in ½ cup of the seeds mixture and mix it through.
Scoop the mixture into silicone muffins cups. Fill 2/3 of the muffins cup. Sprinkle some of the seeds mixed with some oat flakes on top. Press gently to they stick with the batter.
Arrange your silicone muffins cups in the air-fryer next to each other. Bake for 12 minutes until golden and skewer test come out clean.
Enjoy immediately or store for serving later, enjoy!
Notes
Banana: It usually takes 3 bananas to fill a cup but it depends on the size of the bananas. For that make sure you measure with a cup and always use overripe bananas.
Date syrup: you can use any other syrup of your choice (honey, maple syrup, agave syrup… ) and if you prefer not giving any syrup for your little ones, this recipe will still be naturally sweeten by the banana
Milk: you can use any kind of milk of your choice or what you prefer to choose for your little one. I usually prepare this recipe with organic grass-fed cow milk or some almond milk.
oat flour: you can easily make your own oat flour at home by pulsing some rolled oats until it’s flour consistency. And you can also replace with whole wheat flour.
Rolled oat: rolled oat is same as the traditional old-fashioned oat.
Oven version: you can totally prepare those muffins in the oven. Just follow the same instructions and bake them in a preheated oven 180 C° for 20 to 23 minutes.
