Pineapple Express

Today is freezing here in my hometown. It just makes me sad saying goodbye to the warm summer sun. Don’t get me wrong I love snowy winter, but not a big fan of this in-between weather!

It’s a season of in-betweens, lifestyle wise, you are no longer in summer and parties mode but not completely back on track in the daily wintery routine with clean meals and good hours of exercising.

You are trying to go get back on track with your diet and at the same time you are still partying to the last drop of sunny summer.

This is why I like smoothies; it is a great way to start your day healthily and full of energy.

Today, I bring you my “goodbye summer “smoothie, it is cold fresh and sweet.  It is high in fibers and anti-oxidant elements, not to forget the good enzymes that help digestion in the pineapple the famous “bromelain”. The high content of bromelain in pineapples helps reduce excessive blood coagulation.

So go ahead and make some smoothies and take one last sip of the tropical beaches and warm summer days.

Serve 1

Ingredients:

  • 2 slice pineapple
  • 1 cup melon cubes*
  • 1 cup aloe Vera juice
  • 1 Tbsp. Honey *
  • 1 tsp. coconut oil *
  • ¼ tsp. cinnamon
  • ¼ tsp. vanilla extract

Instructions:

  • Add all the ingredients in the blender and pulse on high speed until smoothie texture is formed (approx. 3 minutes)
  • And that’s it! Enjoy

Serving Size: 1 smoothie • Calories: 255 • Fat: 4 g • Carbs: 58 g • Fiber: 8 g • Protein: 1 g

Notes:

*for a better refreshing taste, put the melon cubes on a tray in the freezer the night before and use them the next morning in the smoothie.

* you can substitute the honey with any artificial sweetener for lower calories or just brown sugar if you don’t have any honey left but I like to use honey for his nutritional benefits and trust me in this blend you don’t want to substitute the honey because it just add that perfect taste t it!

* you can substitute the coconut oil with coconut flakes.
