This Creamy raspberry oatmeal recipe is what I like to call it one beautiful accident. It is full of surprise flavors and textures. A combination of sweet and tangy flavor that will get you awake and refreshed in the morning. This breakfast will sure keep you going until lunch.

I love to eat oat almost everyday but it can get boring sometimes. This creamy raspberry oatmeal recipe is the just what you need to spice-up your oat game . And if you are not an oatmeal fan and you want to give it a shot: This creamy raspberry oatmeal is the way to start. Because it will make you fall in love with oatmeal.

This creamy raspberry oatmeal bowl is sweet and tangy. It is the best way to perk up a plain oat breakfast bowl and make it way more interesting!

This creamy raspberry oatmeal breakfast is packed with raspberries. It is mixed in the oat mixture and made as a delicious chia jam for the topping. with a extra fancy adding of lime zest and some chopped pistachio to make it just perfect!

Creamy Raspberries Oatmeal

this heavenly oatmeal bowl is the perfect way to break away from the boring plain oatmeal. with a perfect lemony raspberries chia jam on top and some greet yogurt. so good!
Servings 1 bowl
Prep Time 5 minutes
Cook Time 2 minutes

Ingredients

  • 1/2 cup rolled oat (40 g)
  • 1/2 cup milk (plant based or cow milk)
  • 1 cup raspberries (fresh or frozen)
  • 1 tbsp honey
  • 2 tsp lime zest
  • 1 tbsp chia seeds
  • 1/2 cup greek yoghurt (125 g)
  • pistachio for garnish
  • extra honey for drizzling

Instructions

  • in a small heat proof bowl mix the the oat and the milk together.
  • microwave for 1 min than give it another mix than microwave for another 1 min. until it is cooked. set aside to rest
  • while the oat is resting. add the raspberries to a bowl, drizzle the honey on top and smash until you have a jam consistency. add the chia seeds and the lemon zest and mix it through. set aside for assembly.
  • add half of the yighurt and 1 tbsp of the raspberries mixture into the cooked oat and give a mix. pour in your serving bowl, top it with the rest of he raspberries chia jam and greek yogurt. garnish with pistachio and some extra honey on top.
  • serve and enjoy!

Notes

  • Oat: you can use any type of oat you like but I prefer the whole big flakes. 
  • Milk: you can use  any type of milk you like , from cow milk to plant based milk like almond and coconut and many more. 
  • Vegan version: you can switch the honey for maple or agave syrup and use a plant based milk and some plant base yoghurt to make this recipe vegan. 
  • Raspberries: you can use fresh or frozen raspberries. and you can use any kind of berries you like, but this recipe is especially designed to complement the tangy taste of raspberries. but If using frozen raspberries or any other berries, you will need to partially thaw them first before starting the recipe. Place the frozen berries in a microwave-safe bowl and microwave on high for 1 minute. Stir, and microwave for an additional 30 seconds and stir again. Then, proceed with the recipe as written.
  •  Stove top: You can cook the oat and milk on stove top if you don’t want to use the microwave. just add the milk into a saucepan and bring to boil on medium low heat. when it come to soft boil add the oat and mix it through , cook it on medium low heat until fully cooked for 5 to 8 minutes mixing occasionally. 
  • Storing: you can meal prep this breakfast and store it in the jar for up to 4 days. I like to layer this recipe up when storing in fridge for the week: start with the oat milk mixture, than the yoghurt on top , than the raspberries chia jam at the end. whenever you want to eat it just mix everything together and enjoy!
