Hello how have you been lately! For me I have been overwhelmed with work and moving houses.
Tonight I was thinking what to cook for Friday lunch. A meatless, tasty and healthy lunch but at the same time a quick meal to do because I have a lot of work to do.
As you notice on my recent posts I do must of the time quick and easy recipe that everyone can do. With some fancy cooking from time to time we all love to do that at some point.
I am like must of the girls out there working 2 jobs with a full schedule and no time to spend in the kitchen but loving yourself and being healthy deserve a 30 minutes per day of your time.
If you won’t love yourself and take care of your body no one will and in our days’ work hours are long and people have to work a lot to keep a decent living so we all are in the same shoes here and if I can manage to cook for myself a healthy meal and do a little bit of exercises while working 12 hours and more a day so you can do it for sure, it just need some motivation and commitment from your part.
My need to do a quick healthy lunch with this strong pasta craving that I have right now made me come up with this great recipe. And here I want to say , let us all admit no one hate pasta, pasta is everyone best friend , no matter how healthy you are , it just a think that you can’t avoid no matter what .
But don’t worry, even our favorite carbs packed dish that we love to eat but feel a lot of guilt while eaten CAN be healthy!
You can eat pasta and enjoy every bite of it without feeling any guilt at all; it is healthy, tasty and nutritious meal. Perfect for your meatless Friday lunches. You can have it with a small salad aside and you are good to go. Enjoy!
If you had some left overs or you did a big batch at once you should try it with the healthy chicken bites for a meat version and the apple and arugula salad on the side , perfect combination!
Vegan Pesto Pasta
Ingredients
- 1 ½ cup uncooked whole wheat pasta
- ½ cup plant-based milk unsweetened
- ½ Tbsp. neutral vegetable oil I use Grapeseed oil
- ¼ tsp. sweet paprika
- ¼ cup sliced fresh mushroom
- 1 clove garlic minced
- 2 Tbsp. homemade pesto sauce
see notes - Salt and black pepper to taste
- ¼ cup cherry tomato cut in half.
Instructions
- Heat oil in a pan
- Add tomato and stir for 1 minute. Then add paprika and mix.
- Add mushroom and mix and let it cooked for 1 minute while stirring.
- Add garlic and pesto sauce and mix until you smell the garlic aroma.
- Add milk and let it boil on high heat than lower heat to simmer, add salt and pepper to taste and mix well.
- Add cooked pasta, mix and let it cook all together for 2 minutes.
- And that’s it! Enjoy
