The two ingredient super salad (APPLE AND ARUGULA SALAD)

This recipe is so fast to make, some people argue it is faster than the sound of their tummies growling!

Super fresh and absolutely perfect for hot summer days.

You can have it as a snack in the afternoon and/or a side with any main dish.

With extremely minimal work to do, you can make one serving (or more) every time you step in the kitchen to drink a cup of water! All you have to do is keep a basket of Aragula in the fridge, and whenever you feel like it, all you have to do is slice up a crisp apple and VOILÀ!!

Ingredients:

Serves: between 1 and 2 servings

For the salad:

  • 1 medium crisp apple
  • 2 cup arugula (washed and drained)

 

For the dressing:

  • ½ lemon , juiced
  • ½ Tbsp. apple cider vinegar
  • 1 Tbsp. olive oil
  • 1 tsp. mustard
  • Pinch of salt and black pepper

 


Instructions:

  • Wash the apple and shop it in thin slices or strips like fries
  • Mix in a bowl the salad ingredient and set aside.
  • In a small jar combine all the dressing ingredients and shake vigorously until well combined. Taste and adjust the taste as you like.
  • Add the dressing to the top of the salad and toss to combine well.
  • You can always add some toasted pecans or dried cranberries for garnish on the top and have a great taste also.
  • Enjoy!
