Orange Cauliflower Bites

Cauliflower is one the most powerful healthy food. Cup of cauliflower contain few calories (30 calories to be precise) and close to zero grams of fat, sodium and sugar. Full of vitamin C and have a good amount of vitamin K, vitamin B6, fibers and omega-3 fatty acids.

 

It has the power to reduce cancer risk and fight inflammation with a remarkable power in decreasing heart disease and brain disorders.

Certain compounds in cauliflower are very useful for helping body to detox due to how they support liver function.

And because cauliflower contains a low amount of calories and fat, sodium and sugar and high content of fiber and vitamins, this makes it an excellent   choice for those who are looking to lose weight, since you can consume a large amount without consuming a big amount of calories and fat.

Consuming a diet rich in whole foods and antioxidant-filled vegetables like cauliflower has been shown to help balance hormones partially by reducing unhealthy levels of estrogen. A poor diet and unhealthy lifestyles makes hormonal imbalances very common; processed foods like canned meat, dairy, and yeast can lead to an unhealthy level of estrogen in the body. Too much estrogen in the blood stream is associated with many health issues.

Now we know how powerful cauliflower is, back to how we can enjoy it with the most delicious healthy ways.

Today I will introduce to you one of many ways to enjoy cauliflower, it is one of my favorite whole foods because there is endless way of eating it.

As you all know by now, I have been trying to cook simple fast recipes these days with all the lack of time I have.

This is an easy quick cauliflower recipe and the secret lies in the dressing, made from scratch ingredients that you can find in any house.

Try those healthy bites with some homemade tahini sauce or with some quinoa, basically you can use those cauliflower bites as topping to any dish you like from carbs to salads.

Ingredients: (serve 4)

  • 1 head of cauliflower washed and chopped into big florets
  • 1 cup grounded oat
  • 2 large eggs, whisked.
  • Salt and black pepper

For the dressing:

  • 2 Tbsp. water
  • ¼ cup of fresh orange juice
  • 4 Tbsp. brown sugar
  • 1 Tbsp. apple cider Vinegar
  • 4 Tbsp. low soy sodium
  • 1 clove garlic, minced
  • ¼ tsp. fresh grated ginger
  • 1 tsp. siracha sauce (you can add more as you like)
  • 1 Tbsp. water + 2 Tbsp. cornstarch

For tahini homemade sauce:

  • 1 Tbsp. tahini
  • 2 Tbsp. yogurt
  • 2 Tbsp. fresh parsley, chopped
  • 1 Tbsp. lemon juice
  • 2 Tbsp. water
  • salt

Instructions:

  • preheat oven on 200 C°
  • whisk egg in a bowl and in another bowl pour the grounded oat
  • dip the florets in egg mixture than in oat and put aside
  • When all finish, spray a baking pan and put the florets and bake for 20 minutes.
  • While the florets is baking, put all sauce ingredients in a pan except water and cornstarch and bring to boil.
  • Reduce heat and simmer.
  • Dissolve cornstarch in water and add to mixture and boil till the sauce is thicken.
  • Remove florets from oven spread the orange sauce over and bake for extra 10 minutes on 180 C° with boiler on in the last 5 minutes.
  • Remove from oven let it cool for couple of minutes
  • Serve and enjoy!
  • For the tahini sauce : just mix all the ingredients in food processor well and serve, if it is too thick you can add water till the texture is as you love.
  • Serve it with some quinoa and sprinkle some tahini sauce on top, or just pour the tahini in a small bowl, dip the florets and enjoy!
