Equipment

Ingredients
- 6 large chicken breasts
- 6 slices ham or halal turkey slices
- 12 slices Swiss cheese or emmental cheese
- salt for chicken seasoning
- black pepper for chicken seasoning
coating seasoning blend:
- 1 tsp salt
- 1 tsp paprika
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
For the Coating:
- 4 egg beaten
- 2 cups crushed kaak (Arabic breadsticks ) or panko
- 2 cups Flour all purpose
- Olive oil spray as needed
For the Sauce :
- 2 tbsp unsalted butter
- 1/2 cup chicken stock
- 3/4 cup cooking cream room temp
- 2 tbsp honey Dijon mustard or normal Dijon mustad
- 1/3 cup grated parmesan cheese
- 1/4 tsp white pepper
- 1/4 tsp salt
Instructions
- Carefully slice a pocket into the side of each chicken breast, going as wide and deep as you can without cutting through the chicken. Season both sides with salt, pepper
- Place 1 slices of ham or turkey and 2 slices of Swiss or Emmental cheese and tightly roll. place inside each chicken breast. Fold closed and secure with toothpicks
- Prepare three bowls: one with the beaten egg season with some salt and pepper. and one with the crushed kaak mixed with half of the coating seasoning spice blend. and one with the flour and the other half of the seasoning spice blend.
- Dip each chicken breast into the flour mixture, the egg, then coat thoroughly in the kaak mixture, pressing gently to help the coating stick.
- Lightly spray both sides with olive oil spray .
- Preheat the air fryer to 200°C.
- Air fry for 20 minutes, flipping halfway through, until golden brown and the chicken reaches an internal temperature of 74°C.
for the Dijon sauce:
- Meanwhile, in a medium-sized pot over medium heat melt the butter. Stir in the stock, cream, parmesan, mustard and white pepper until blended, then bring to a gentle simmer. Simmer for 5-6mins, stirring frequently, until the sauce thickens (it will thicken more as it cools). Adjust with salt if needed then remove from heat.
serving:
- Let rest for 5 minutes before serving. carefully twist and remove the toothpicks out from the chicken.
- serve with some green salad on the side and the dijon sauce on top. enjoy!
