This easy healthy air fryer chicken cordon bleu delivers everything you love about the classic version: crispy coating, juicy chicken, savory ham, and melted cheese but without deep frying. Cooked in the air fryer until golden and crunchy, it's a lighter, family-friendly dinner that's perfect for busy weeknights while still feeling a little special.
Carefully slice a pocket into the side of each chicken breast, going as wide and deep as you can without cutting through the chicken. Season both sides with salt, pepper
Place 1 slices of ham or turkey and 2 slices of Swiss or Emmental cheese and tightly roll. place inside each chicken breast. Fold closed and secure with toothpicks
Prepare three bowls: one with the beaten egg season with some salt and pepper. and one with the crushed kaak mixed with half of the coating seasoning spice blend. and one with the flour and the other half of the seasoning spice blend.
Dip each chicken breast into the flour mixture, the egg, then coat thoroughly in the kaak mixture, pressing gently to help the coating stick.
Lightly spray both sides with olive oil spray .
Preheat the air fryer to 200°C.
Air fry for 20 minutes, flipping halfway through, until golden brown and the chicken reaches an internal temperature of 74°C.
for the Dijon sauce:
Meanwhile, in a medium-sized pot over medium heat melt the butter. Stir in the stock, cream, parmesan, mustard and white pepper until blended, then bring to a gentle simmer. Simmer for 5-6mins, stirring frequently, until the sauce thickens (it will thicken more as it cools). Adjust with salt if needed then remove from heat.
serving:
Let rest for 5 minutes before serving. carefully twist and remove the toothpicks out from the chicken.
serve with some green salad on the side and the dijon sauce on top. enjoy!

Mozzarella can be used for a stretchier cheese pull, while Gruyère offers a richer flavor.Breadcrumb KAAK Alternatives: Crushed kaak (Arabic breadsticks) is my preferred coating because it creates an extra crunchy texture and beautiful golden color. Panko or regular breadcrumbs can also be used.Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.Reheating: Reheat in the air fryer at 180°C for 4–5 minutes until heated through and crispy.Freezing: Freeze breaded uncooked chicken cordon bleu for up to 2 months. Cook directly from frozen, adding 5–7 minutes to the cooking time.Meal Prep: The chicken can be assembled and breaded up to 24 hours in advance and stored covered in the refrigerator until ready to cook.Cooking: you can also cook in the oven on 200 °C for 30 min . lay a baking tray with foil than add a wire rack and spray with some oil before adding the chicken cordon bleu on it. spary with some extra oil on top and cook. Common Mistakes:Avoid overstuffing the chicken, as too much filling can leak during cooking. Be sure not to overcrowd the air fryer basket to allow proper airflow and crisping.
