Meatless meatballs

A perfect vegetarian version for meatballs that you can use in any kind of meat ball dishes, like pasta and soup and many others.

It is very tasty, filling and full of vitamins and minerals.

You can make a big batch and store in the freezer for later use.

I’m going to introduce so many recipes to use those little cuties in.

But one of the simplest ways is with some pasta and homemade marinated sauce.

And like topping with our low-carb green pizza.

 

Meatless meatballs:

Serves: 20 balls

Ingredients:

  • 1 ¾ cup cooked and drained black beans
  • 100 g oat flour.
  • 1 egg yolk
  • 1 medium green pepper, minced
  • 1 medium onion, minced
  • 3 clove garlic, minced
  • 2 tsp. olive oil
  • Salt and pepper
  • ¼ cup parsley, chopped


Instructions:

  • Preheat oven to 190 ◦C
  • Heat oil in a pan on medium heat, add the onion and cook until they began to soften and brown, add the green pepper and cook until began to soften than add the garlic and cook for one minute.
  • Transfer mixture to the food processor and add the black beans, oat flour, egg yolk, parsley, salt and pepper. Process until a ball began to form.
  • Remove the blade from the processor and scoop out 1 tablespoon of the batter and form into a ball. Repeat that till you have the 20 balls approx.
  • Arrange balls on a baking sheet and bake for around 15 min. you can bake for more few minutes if you want a crispier texture.
  • Remove from oven top with your homemade marinated sauce and serve. You can even use those balls into too many different other recipe.
  • Enjoy!
