Low Carb Pizza – Green Crust Version

It is absolutely true that having a healthy clean lifestyle is the best thing you can do to your body! And unfortunately it is also true that most people think lame boring food instantly when you say those three simple words “Healthy Clean Lifestyle”.

And I’m not going to lie to you guys, eating that same bowl of steamed broccoli and some chicken and brown rice every day IS boring and very very lame.

And for that there are so many blogs about healthy recipe ideas out there for you to try.

You can have your broccoli in countless different ways.

Today I am going to introduce to you one of the funniest and most delicious ways to have your broccoli.

Actually I think if you have children and you struggle to make them eat their veggies! Well that is the only way you can sneak those veggies into their favorite meals without them noticing it! And everybody wins!!!

It is pizza guys! Who doesn’t love pizza? Kids and grown-ups.

Well this is the way to cut some noticeable amount of carbs out of our favorite meal and still having a good delicious slice of pizza.

 

The procedure is not that hard and the taste is incredibly tasty and fulfilling.

I called this recipe “the green version” because I used broccoli instead of cauliflower as the most common recipe on the internet.

I like adding colors as much as I can to my food. Don’t get me wrong the cauliflower crust is absolutely great but for me each topping have its own crust color to go with it! Call me weird but let us face it I am an architect at the end of the day, assortment of color, shapes and texture is my thing!

I tested the recipe many times with different types of veggies that I will be sharing with you, one after the other later on and I have to say that I am VERY pleased with each one of the versions – it gives a chewy crust with lots of flavors and is very filling as well.

Anyway back to our recipe now, a great green crust with traditional topping is the real deal. It is the perfect low carb dinner with a twist.

And yes you have a healthy lifestyle while having a PIZZA for dinner!

Low Carb Pizza – Green Crust Version 01

Serve: 8 slice

Ingredients:

For the Crust:

 

  • ¼ cup Parmesan Cheese
  • ¼ cup Mozzarella Cheese
  • 1 Small head Cauliflower
  • 1 Small head Broccoli
  • ¼ tsp. salt
  • ½ tsp. oregano
  • ½ tsp. basil
  • ½ tsp. garlic powder
  • ¼ tsp. red pepper flakes
  • 1 egg

 

For the Topping:(you can have any topping you want this one is from my suggestions that i highly recommend trying it)


 

Instructions:

  • Preheat oven to 200 ◦C and place your baking sheet in the oven.
  • Remove the florets from your head of cauliflower and broccoli wash and drain well.
  • In food processor, place the florets and pulse until cauliflower and broccoli has the texture of sand. You should have 2 cups or 2 cups and half of cauliflower and broccoli rice.*
  • Transfer he cauliflower and broccoli mixture to a microwave safe bowl and microwave for 4 minutes. Let your mixture cool completely before using it.
  • Place the mixture in a clean kitchen towel and wring it tightly. Try to remove as much moisture as you can from it.*
  • Place the cauliflower and broccoli pulp in a mixing bowl and add cheeses, spices and the egg.*
  • Mix with your hand until well combined.
  • Form the dough and place it on the parchment paper sprayed with coconut oil. Place a second sprayed parchment paper on the top of the dough and roll it out into a circle about 0.5 cm thickness.
  • Carefully transfer the pizza crust into to the hot baking sheet.
  • Bake for 8-10 minutes until the crust is golden brown. Carefully remove it from the oven.
  • Spread the marinated sauce, vegetables and cheese and place it back in the oven.
  • Bake for another 5-7 minutes until the cheese is melted and bubbling slightly.
  • Remove your pizza from the oven and let it cool for about 5 minutes before slicing to make sure the crust is intact.
  • Enjoy!

* if  it turn out to be more than 3 cups maximum of the cauliflower and broccoli rice you can store them in the freezer for another use.

* try doing the cauliflower and broccoli in the towel in two batches to get the mixture really dry.

* I added in this recipe 1Tbsp. of ground chia seed to help absorb the extra moisture and hold the dough together more.
