White beans sandwich

Except for the weekends, I haven’t been having time lately to spend in the kitchen preparing and cooking, so in the middle of the week as you all know and all do maybe, We cook simple recipes that are easily packable for lunch the next day.

It is really a complicated phase for me right now, finishing up my work here and preparing for my wedding and finding a new job in UAE and searching for furniture for our new home and trying to stay healthy and fit before my wedding and not letting the stress get me!

We all have that transition phase in our lives, where we have no idea what we are doing; well that is where I am now! 😛

For that I still insist on continuing my journey of healthy clean cooking, because that is the only place I can find peace now and not think about anything but my beautiful recipes.

Today I am going to showcase an easy vegan recipe perfect for those few days of lent that are left, very easy and fast to do and with simple ingredients that everyone has, but it is a new idea to spice things up a little and not eat the same old stuff again and again!

In this recipe, I used white lima beans, I just love them! As simple as that! 😛

I love the bright color and the shape and the taste, but you can use your imagination and use the same concept of this sandwich with any kind of beans you like.

The beans sandwich is the perfect vegan replacer for your favorite meat, chicken or egg sandwich.

Lima beans are very good source of cholesterol-lowering fiber. In addition to that lima beans are high in fiber content and prevent blood sugar level from rising too rapidly after a meal. Lima beans provide a fat-free high quality protein which makes it perfect to replace the lack of protein coming from chicken and meat that are forbidden in lent menus or any vegan diet whatsoever.

A small fact about those beautiful large white beans:

A cup of lima beans will provide you with 13 grams of fiber and almost 15 grams of protein and all this will cost you only 216 calories with virtually no fat at all!

 

So with no further introductions, this is the most delicious vegan buttery sandwich with no need for any extra dressing or sauces just clean healthy ingredients from your pantry!

White beans sandwich:

Serve 2 sandwiches

Ingredients:

  • 1 can white lima beans, rinsed and drained
  • 1 Tbsp. virgin olive oil
  • Half a lemon fresh juice
  • Salt and black pepper to taste
  • 2 tsp. Dijon mustard
  • 1 tsp. old fashioned mustard
  • You can add some cashew ( ¼ cup raw cashew)
  • 4 slices of whole wheat bread or any kind you like
  • 10 small radish, thinly sliced
  • 1 roman tomato, thinly sliced
  • 1 avocado, thinly sliced
  • Lettuce, arugula or any kind of green leaves you like

Instructions:

  • Soak cashew in hot water for 15 min. once softened drain and rinse them.
  • Combine the beans, olive oil, mustard and lemon juice and cashew in a medium bowl.
  • Mash the mixture together till it comes together. Season with salt and pepper to taste.
  • Divide the bean mixture among two slices of the bread, spread in a single layer.
  • Top each with some radish, sliced tomato, avocado and green leaves, season with salt a peer.
  • You can mash the avocado before topping the sandwich with it.
  • Top with the remaining slices of bread and serve.
