Orange Chocolate cake

With all that is going on in my life right now from preparing with my husband for our new house or getting used to the new life in Dubai and re-arrange my lifestyle and searching for work and everything else!

It has been hard for me to find a time to meditate and cook in the kitchen, the only place where I forget everything else around me and just enjoy playing with food.

So my come back to the kitchen had to be adventurous, sweet and intense.

Luckily as you see in the pictures it was!

With this gorgeous colorful loaf I made, AND of course it is a healthy version of the original orange cake but sugar-free, dairy-free with no artificial additive but with the same juicy zesty taste of orange and the fluffy texture of the cake you are used to in the traditional orange cake with a perfect mix with chocolate that created this beautiful marble effect in each slice I cut.

You can have a slice for breakfast with some yoghurt or milk, you can have one for a snack after lunch or before the gym, you can have it anytime anywhere you want guilt-free.

This marble orange chocolate cake is just one of my favorite recipes, and just to make sure that not just me that I like my cooking, I prepared one to share with some family friends they were coming for dinner that night.

And my experiment was a big success! They all loved it from the look of it to the taste. They enjoyed it after dinner with no guilt!

 

Even my picky husband that has a sweet tooth and likes everything with extra sugar in it loved it!

Orange Choco Cake:

Yield 16 pieces

Ingredients:

  • 2 cup oat flour (or wholemeal flour)
  • 1 cup almond milk *
  • ½ cup raisin
  • 1/3 cup coconut oil
  • ½ cup honey *
  • 2 Tbsp. crushed walnuts
  • Juice of 1 Orange
  • 1 tsp. finely grated zest of orange
  • 2 tsp. baking powder
  • 60 g melted dark chocolate. (approx.

Additional: 

  • Dark chocolate for garnish
  • Orange slices for garnish

Instructions:

  • Preheat oven on 180 ˚C
  • In a bowl mix all dry ingredients, and set aside.
  • Add the wet ingredient except for the chocolate.
  • Mix all the ingredients very well until a batter is formed.*
  • Divide the batter into two bowls, and add the melted dark chocolate into one of the bowls and mix well till a chocolate homogeneous batter is formed.
  • In the baking loaf pan, in a measuring cup of 1/3 cup pour a layer of white batter a layer of dark chocolate until you finish the batter.
  • Finish by garnishing with lemon slices.
  • Bake in the oven for 45 to 60 minutes it depends between an oven and other mine took 60 minutes, but keep checking on it so it won’t burn after the 45 minutes had passed.
  • Remove from oven and let it rest for a couple of minutes before cutting it, the more you leave it to rest the more it will be easier to cut it but let it sit for minimum 15 minutes.
  • While it is still warm garnish with some sprinkles of melted dark chocolate.
  • Enjoy!

 

 Notes:

* You can replace the almond milk with any kind of nut milk or skim milk if you don’t want a vegan milk.

* For the honey you can substitute it with any organic syrup like maple syrup, dates syrup, agave syrup …

*While mixing the batter if coconut oil crumbled don’t worry it will break down while mixing heat.
