Honey Baked Oatmeal

This dry fruit blueberry baked oatmeal recipe is perfect for a make-ahead breakfast or snack in those busy days of my new motherhood life. I am trying to focus on healthy nutritional food to boost my milk supply because I am breastfeeding my little “ Jea”.

This 1-bowl recipe is:

Dairy-free

Gluten-free

Made without refined sugars

This recipe is very nutritious for new busy mummies like me, or for any busy lifestyle in general. It’s rich in fiber, very filling for breakfast or snack.

full of milk boosting ingredients like:

oat

almond milk

dry fruits

apple sauce

berries

flaxseed

and many more

there is no magic potion of course that will increase your breast milk supply, but a healthy balanced diet and some food may help.

During my breastfeeding journey I am preparing a lot of oat bars and baked oatmeal. Oatmeal is essentially combining oats, milk, eggs, and some extra flavoring ingredients and bake in the oven and that is it! 

You can eat it warm from oven or cold later. This what makes it great meal prep option to pack for later or whatever hunger hits in those night breastfeeding sessions.

For this recipe I usually use rolled oat but honestly, I prepare it so many times with quick cooking oat or whatever oat kind I have in my pantry and it worked great also. For the best texture you need the rolled oat, but it works fine with the other types.

And the extra plus in this recipe is that YOU CAN FREEZE IT!

Which makes it perfect to prepare ahead while you are pregnant and store it in the freezer to use after birth when you barely have time to eat or have a shower. Just let it cool completely and store airtight container for up to 3 months. Either defrost overnight in the refrigerator or give it a quick heat up in the microwave!

Healthy Baked Oatmeal

It is a perfect make-ahead meal and freezer friendly.

Equipment

Ingredients

  • 2 eggs preferably free range
  • 1 cup almond milk ( or any plant based milk)*
  • 1/3 cup honey ( or any syrup of your choice) *
  • ¼ cup apple sauce
  • 1 tbsp coconut oil
  • 3 cups of rolled oat (see notes)
  • ¼ cup dry apricots
  • ¼ cup dry figs
  • ¼ cup blueberries ( fresh or frozen)
  • 1 tbsp flaxseeds
  • Pinch of salt

Instructions

  • Preheat oven to 180 C◦ and brush an 20×20 cm oven-safe baking dish or anything equivalent. You can add also add a parchment paper inside the dish for easy removal of the baked oatmeal.
  • Mix all the wet ingredients together and whisk until well combined.
  • Add the oat, dry apricots, dry figs, blueberries, flaxseeds and salt and mix it all together until fully combined.
  • Spread into a baking dish and bake for 30-35 minutes until the center is just barely firm.
  • You can serve immediately warm or let it cool and slice into 12 portions and store for later.

Notes

  • You can use any kind of milk you like; I use almond milk or plant-based milk to boost the good fats amount into the recipe. And nuts are a great boost for the milk supply
  • You can substitute honey with any syrup of your liking, I tried it also with date syrup for a richer recipe and dates are great for the milk supply, try it out!
  • You can use any combination of dry fruits you like. You can also add nuts and seeds.
  • I tried this recipe with frozen and fresh blueberries, and both end up with good result, just don’t thaw the freezed berries , remove from the freezer directly to the mix.
  • For the best result use the rolled oat but I tried it with other types and turned out just fine also, the texture is slightly different, but it works.
