I always come up with few super easy recipes for those time of the year when you are traveling like summer or Christmas  vacation and you are busy preparing and packing and finishing up some few last minutes chores and you just need something, quick yet still fresh and healthy to put on the table for lunch or dinner. That is where this easy refreshing gnocchi and shrimp with lemony-spicy sauce recipe steps in to save your day! 

It’s a very simple comfort dish that is very easy to do.

& guys when I say easy, I mean very easy as 1 2 3.

Especially if you go with store bought gnocchi, it is less than 30 minutes and less than 10 ingredients recipe.

It is a simple yet very flavorful recipe. it is very refreshing with the lemony zesty sauce and those vibrant fresh basil leaves.

All you have to do is cook those gnocchi, then roast them for an amazing texture plus in this dish, then toss them with the shrimp all together with the lemony sauce. Finish it all up with a final touch of basil and chili! and guys you don’t want to miss this last step trust me! 

Roasting those cute little babies will add some much depth to this dish, don’t rush it! It is already a very simple and quick recipe so take the time to reach that perfect golden-brown color with your gnocchi, totally worth it! 

What it makes it a summery dish for me is the sauce. The garlicky lemon and basil sauce add some much freshness and excitement to this recipe. and it is a very light sauce with no extra creams or cheese to make even more energizing in those hot days of summer. But it is definitely an all-season comfort food type of dish, you can enjoy it any time of the year whenever you are in a rush and need something quickly on the dinner table this is your recipe!

Lemony shrimp gnocchi:

The garlicky lemon and basil sauce add some much freshness and
excitement to this gnocchi and shrimp dish. It is a very light sauce with no extra creams or
cheese to make even more energizing in those hot days of summer. But it is
definitely an all-season comfort food type of dish packed with protein!



Servings 3 serving

Ingredients

  • 1 pack (400 g) potato gnocchi
  • 2 tbsp grapeseed oil
  • 300 g shrimp clean and divined
  • ½ tsp salt
  • ¼ tsp black pepper freshly grinded
  • ¼ tsp white pepper
  • 3 cloves garlic minced
  • 1/3 cup chicken broth or gnocchi cooking water
  • 1 lemon Juice
  • 1 tsp lemon zest
  • 12 leaves of fresh basil cut into strips
  • ¼ tsp chili flakes or more to taste

Instructions

  • Step 01: cook your gnocchi according to package and set aside in a strainer. Leave 1/3 cup of the cooking water if you are not going to use chicken broth.
  • Step 02: heat 1 tbsp oil in a large pan over medium-high heat, add the cooked gnocchi and cook until golden brown and crisp on the edge (3min on each side). Remove from pan and set aside.
  • Step 03: in the same pan add 1 more tbsp of oil and add the garlic and stir for 30 seconds until fragrance than add the shrimps with the salt and black pepper and white pepper and cook until the shrimps are pink and cooked through (3min/side).
  • Step04: add the lemon juice and the zest and the broth and cook on high heat until most of the liquid is evaporated. Add back the gnocchi and toss gently to combine for 1 minute.
  • Step 05: turn off the heat and add the basil strips and chili flakes and toss gently to combine
  • Serve warm and enjoy!

Notes

For serving: serve warm or you can store for mid-week meals for up to 3 days in the fridge. It is better to leave the basil and chili for when you want to eat just after you reheat your food sprinkle the chili and basil on the top and give it a toss .
