Banana brownies

Remember my post few weeks ago on Instagram about a very easy healthy brownies recipe?

Well this it, the must simple and easy brownies recipe that anyone can do, I tried few version of it those couples of week and it all works well.

The base of this recipe is 3 simple ingredients:

Banana

Nut butter

Cacao Powder

 

And from that you can add anything you want, the version shown in the picture of this post, I added some pistachio and some ground coffee.

I tried another version with dry cranberries and cinnamon.

The banana part it usually takes from 3 to 4 bananas, it depends on the size of the bananas but it should yield a cup approx.

Now in the second trial I tried to add 1 ½ cup of mashed bananas instead of 1 it give more thickness to the pieces after baking. I recommend doing that.

For the nut butter, I substitute half of the quantities with dates, because I use organic homemade nut butter that have no additive of sugary stuff what’s so ever , so for  a sweeter taste and added dates to the recipe, because they are sweet by nature.

For the cacao powder, the more chocolate deep flavor you like the more you add , for me I think the perfect amount is 2 Tbsp. but you can go as much as ¼ cup if you like the dark chocolate taste to be more clear in those brownies.

Here you can add any extra flavor you like, some raw nuts is not a bad idea and for more sugary taste the raisin and dry cranberries are a good option too.

For those of you who are coffee lovers like me, ad 1 tsp. of grounded instant coffee it gives a great coffee taste to the recipe.

You can go more, by adding some chocolate chunks in it also.

I notice that the taste of the brownies, taste even better when put in the fridge for a while.

This recipe is not about making those bite less in calories only, but also use healthier ingredients, for less chemical and processed ingredients in it. The fat and sugar is still there ,  don’t do miracles 😛 but having unsaturated fat is a good thing instead if having refined sugar and saturated fats that are bad for you health. The conclusion is that you can have those bites guilt-free!

Banana Brownies:

Yield 6 to 8 pieces

Ingredients:

  • 3 very ripped banana
  • ¼ cup homemade peanut butter
  • ¼ cup medjool dates, soaked in 2 Tbsp. of warm water
  • 2 Tbsp. cacao powder

Additional:

  • 1 Tbsp. dried cranberry (or 1 Tbsp. Raw pistachio)
  • ½ tsp. cinnamon (or ½ tsp. grounded instant coffee )

Instructions:

  • Preheat oven on 180 ˚C
  • In a food processor, add the banana with the peanut butter and dates and cacao powder, and pulse till smooth.
  • Add the cranberry and cinnamon, and mix with the spatula.
  • Grease a small pan 15 to 20 cm Ø, and add the mixture in it and spread well.
  • Bake in oven for 15 minutes or until the sides are slightly crisp.
  • Let it rest 10 minute before cutting it, and for better taste let it sit in the fridge for a couple of hours.
