“Spongefully” Bread

Even though Bread is a very essential ingredient in the culinary experience, and especially in our culture, it is also a big source of carbs in our diet. You can eat so much bread, never stop, and never feel that you ate too much!

This version of bread, gives you the same feeling of eating bread while eating something healthy and full of fibers.

It is different from all of the “Healthy Bread” recipes you find online. Contrary to those, it doesn’t fall apart but sticks together in a very mellow kind of way.

Make a batch and store them either in the fridge (life expectancy 1 week) or put them in a Ziplock bag and put them in the freezer (life expectancy: up to 2 months).

Add Beetroot or Carrots while coarsely chopping the broccoli for a slightly different taste and a big difference in color. You can also use many different ingredients and experiment with the taste and color!

Add the egg in the center of the mix and whisk it with a fork.

“Spongefully” Bread (broccoli):

Makes about 6 slices

Ingredients:

 

  • 1 small broccoli floret
  • 2 medium eggs
  • ½ cup homeground oat flour
  • ½ tsp. salt
  • ½ teaspoon black pepper
  • ½ teaspoon oregano
  • ½ teaspoon basil
  • ½ teaspoon thyme


Instructions:

  • Preheat the oven to 200 ͦ
  • Coarsely chop the broccoli (use the brighter part of the stem too), place in food processor and blend until you have got a fine rice-like texture.
  • Measure 2 cups of the broccoli rice and place it in the mixing bowl.
  • Add oat flour, salt, pepper and seasoning and mix well.
  • Add the egg in the center of the mix and whisk it with a fork.
  • Use your hand and combine well the ingredients until a dough is formed. (it will be more wet and loose from a traditional dough)
  • Transfer to the baking paper and roll it out into a rectangular about 8mm thickness.*
  • Bake on the middle rack in the oven for about 20-25 minutes until slightly golden and firm.
  • Remove from the oven and let cool completely.
  • Cut into bread-size slices and store in the fridge.
  • Enjoy!

*You can  roll out the dough between two parchment paper if you want to use a rolling pin  or you can do it with your hands without the parchment paper on the top.

“Spongefully” Bread (beetroot ):

Makes about 6 slices

Ingredients:

 

  • ½ small broccoli floret
  • 2 medium raw beetroot (peeled)
  • 2 medium eggs
  • ½ cup homeground oat flour
  • ½ tsp. salt
  • ½ teaspoon black pepper
  • ½ teaspoon oregano
  • ½ teaspoon basil
  • ½ teaspoon thyme


Instructions:

  • Use the same instruction and measurements as the broccoli recipe.
  • The dough is slightly more moist than the broccoli  one but dries up when baked.

“Spongefully” Bread (carrot ):

Makes about 6 slices

Ingredients:

 

  • ½ small broccoli floret
  • 3 medium raw carrots (peeled)
  • 2 medium eggs
  • ½ cup homeground oat flour
  • ½ tsp. salt
  • ½ teaspoon black pepper
  • ½ teaspoon oregano
  • ½ teaspoon basil
  • ½ teaspoon thyme


Instructions:

  • Use the same instruction and measurements as the green flatbread recipe.
  • The dough is slightly more moist than the green flatbread one but dries up when baked.
