Roasting garlic for this dressing is a breeze when you have an air fryer, just as I shared in my previous article. I rely on my favorite Instant Vortex Airfryer to roast a small quantity of garlic precisely when I need it for this dressing. With this method, there’s no need to fire up the entire oven and consume hours of energy. It’s a quick and energy-efficient way to achieve that beautifully roasted garlic flavor that enhances the dressing’s richness.
Roasted Garlic Tahini Dressing:
Equipment
- 1 immersion blender or food processor
Ingredients
- 1 head of garlic
- 2 tbsp extra virgin olive oil
- 1/4 cup tahini
- 1 lemon juice
- 1 tbsp honey maple syrup for vegan option
- 1 tbsp yellow mustard
- 1/2 tsp Dijon mustard
- 1/2 tsp salt or to taste
- 1/4 tsp black pepper
Instructions
Roast the Garlic: see notes
- – Preheat your air fryer to (175°C).
- – Cut the top off the head of garlic to expose the cloves.
- – Place the garlic on a small piece of foil, drizzle with a little olive oil, and wrap it up.
- – Roast the garlic in the oven for about 20-25 minutes, or until the cloves are soft and golden.
- – Let the roasted garlic cool.
Prepare the Dressing:
- – Squeeze the roasted garlic cloves out of their skins into the bowl of an immersion blender or food processor.
- – Add the tahini, water, lemon juice, and all the other ingredients and seasonings.
- – Blend until the mixture is smooth and well combined.
Taste and Adjust:
- – Taste the dressing and adjust the seasoning, adding more salt, lemon juice, or sweetener if needed.
Adjust Consistency:
- – If the dressing is too thick, add a bit more water if needed and blend until you reach your desired consistency.
Serve:
- – Transfer the dressing to a container and refrigerate until ready to use. It can thicken in the fridge, so you may want to add a little water and stir to reach the desired consistency before serving as a dressing or keep it thick if serving as a dip sauce or spread in sandwiches.
