I can’t find any word to describe this beautiful piece of art that I made this weekend.
Just look at the pictures! There is no way something pleasant to the eyes this much is not unbelievably delicious AND super healthy.
Those vibrant colors are very clear in this pie’s taste.
This piece of art is my own version of the lovely quiche that we all love.
It is healthy, sugar free, butter free, flour-free, and free from all processed unhealthy ingredients.

They ate it all, and kept asking me “Anna! Are you absolutely sure this is healthy and there is no butter in it?!”
The secret hides in the crust! Using these super yummy healthy power-ingredients as a crust base make this quiche absolutely perfect and even better than the traditional quiche that is full of butter.
Ingredients:
For the crust:
- 1 kg sweet potatoes, washed, peeled and grated in large holes grater
- 2 tsp. salt
- 1 tsp. black pepper
- 1 egg
For the filling:
- 1 green onion, washed and thinly sliced (white and green part)
- ½ cup bacon
- ½ tsp. salt
- ½ tsp. nutmeg
- ½ tsp. pepper
- ½ minced garlic
- 4 eggs
- 1 bag baby spinach
- 100 g feta cheese crumbed
- 100 g “akawi” cheese crumbed
- 1 tomato, sliced , for garnish
Instruction:
- Preheat oven to 220 C˚.
- Place the grated sweet potato in a large clean kitchen towel or cheesecloth. Gather corners together and squeeze out as much moisture as you can.
- In a medium bowl, whisk together the egg with salt and pepper.
- Add the sweet potato to the mixture and mix all ingredients together.
- Spray the pan (25cmØ), and press the sweet potato mixture into the pan bottom and sides.
- Bake for 30 minutes, remove from oven and allow it to cool for 10 minutes at least.
- Turn oven down to 180 C˚.
- Add the bacon to a heated pan, for 1 minute than add the green onion with the salt, nutmeg and pepper and cook until softened for about 5 minutes.
- Add garlic and allow it to cook with the onion for 1 minute.
- Add the spinach and allow it to cook less than 1 minute.
- Remove from heat and allow it to cool for minutes before adding the egg.
- For the egg mixture, whisk the egg with some salt and pepper. Add the onion and bacon mixture with ½ the quantity of both cheese and mix well.
- Pour the filling into the prepared crust; sprinkle the remaining cheese on top.
- Top with sliced tomato ,and some paprika (optional)
- Bake for 30 minutes, until the center is mostly set; allow cooling for 20 minutes before serving.
