No-Bake Guiltless cheesecake

Who doesn’t crave a sweet big slice of cheesecake from time to time?

The Summer vacation, celebrations, weddings, and family gatherings don’t make these cravings go away… instead, they get worse!

We all know how fatty and full of carbs, and sugar a slice of cheesecake can be.

Even if you try to make it “healthier” or “lighter” by replacing the cream cheese with its lighter version, and/or the biscuit in the crust with a lighter version as well, I’m sorry to disappoint you but it will still be loaded with sugar, carbs, calories and many other bad influences for your body.

After few trials, I’m happy and very proud to present to you” the ultimate cheesecake recipe”. Not only is it lower in calories, carbs, and fats, but also, it is actually full of nutritional benefits for your health and is made from raw whole ingredients.

Now, what if I told you that in addition to all of those benefits, this recipe is so easy to make! It is  actually easier than the normal cheesecake recipes.

It’s a no-bake cheesecake recipe, creamy, sweet with a perfect silky texture.

AND it’s cheaper than any “light” cheesecake slice you can buy. With this recipe, you can actually up to 12 slices and it will cost you lesser than buying 3 slices from any store or bakery.

And the most exciting thing about it is that you could eat FOUR slices of this cheesecake and still consume fewer calories than in one slice from the “Cheesecake factory” and for sure with more health benefits than any cheesecake you have yet to taste.

No-Bake Guiltless CheeseCake:

Ingredients:

For the Crust:

For the Filling:

  • 2 cups Cashew
  • ½ cup Coconut Oil  
  • 1 lemon juice
  • ½ cup Almond Milk
  • Stevia sweetener (to taste)
  • 1 tsp. Vanilla extract
  • 1 tsp. cinnamon

For the top layer:


Instructions:

  • Soak the cashew in water for at least 8 hours (or overnight for better results)
  • After soaking the cashew rinse and drain very well to remove any extra moisture in it.

For the crust:

  • In a small bowl soak the raisins in warm water for a couple of minutes (5 min approx.)
  • Rinse the raisin and drain them very well.
  • In a food processor pulse the walnuts until finely grind.
  • Add the raisin and continue mixing until sticky dough is formed.
  • Pour the mixture into the cheesecake pan.
  • Use your hands or the back of a spoon to press the crust mixture evenly into the tin. I used a 24cm pie tin with a removable base but if you can use a 20cm pie tin for a thicker crust.
  • Put into the freezer while preparing the filling.

For the filling:

  • In the food processor (after washing it from the crust residue) add the cashew and pulse until finely grind.
  • Add the melted coconut oil and lemon juice and continue pulsing.
  • Dissolve the stevia sweetener in the almond milk very good (I used 1 Tbsp. but you can make it as much sweet as you want)
  • Add the almond milk to the mixture in food processor with the vanilla extract and the cinnamon and continue blending until a smooth mixture is formed (5 min. approx.)
  • Remove the crust from the freezer, add the filling evenly above it and put back in for at least 4 hours.
  • Before 15 minutes of serving remove it, add the jam topping*and let it sit in the fridge until serving time.
  • You can totally garnish it with more fresh strawberries or anything you like but I like mine simple.
  • Enjoy!

 

 

Notes: * I used my homemade strawberry chia jam for the topping but if you didn’t try this recipe yet (which you should do) you can top it with this simple recipe:

For the topping:  in a medium saucepan, mix ¾ cup of roughly chopped strawberry with ½ cup of granulated brown sugar or stevia sweetener and 3 Tbsp. of water . Bring to boil, and then reduce the heat to medium-low. Cook for 10 minutes, stirring frequently. Allow to cool before topping on the cheesecake.
