Remember that childhood lunch meal that your mum would fight with you to eat it?
Recipe I will share with you today was one of those. But as I grow up and travelled and lived away from my family, this recipe became one of my favorite nostalgic comfort meals.
Just the smell of it in the kitchen bring back the beautiful memories of my childhood. Sometimes cooking something that my mum used to prepare for us ease the feelings of missing them all year long.
Besides being now my favorite childhood recipe.

This is my to go recipe whenever I am short on time or I am to busy with the baby that I have no energy left to cook. and to make it easier it is made in the smart pot, so you just dump everything, close the pot and continue finishing up other chores while it is cooking.
The best way to enjoy the Lebanese vegan green beans stew is with some vermicelli rice or pitta bread and some green onions.

Lebanese vegan green beans stew – smart pot
Equipment

Ingredients
- 1 tbsp olive oil
- 1 medium onion sliced
- 1 cup diced tomato
- 2 medium koussa aka Magda Zucchini, sliced (optional check notes for variations)
- 5 cloves garlic sliced
- 500 g green beans cleaned and cut in half
- 1 tbsp tomato paste
- 1 cup tomato puree
- 1 tsp cinnamon powder
- 1 tsp sweet pepper
- 1 tsp salt
- ½ tsp black pepper
- 1 cup vegetable broth or water
Instructions
Step 01: chop and prepare all ingredients
- Make sure you wash the green beans thoroughly and remove the stems from both sides, and cut in half. Wash and set aside to drain. Chop and prepare all the remaining veggies and prepare your spices and add-ons.
Step 02: sauté and cook in the smart pot
- Set your pot to sauté option. Add the oil and heat it through. Add the onion first and stir until stat to get tender and transparent. Add the diced tomato and stir also until the pieces start to break. Add the garlic and stir for seconds until you start to smell the garlic. Add the koussa and stir for 3 minutes. Now add the green beans and mix it through and start adding all the remaining ingredients (the tomato paste and puree, the spices and the broth). Mix everything together till is combined.
- Close your smart pot and set it to cook manually on high pressure for 10 minutes.
Step 03: release the pressure and serve your meal
- After the 10 minutes pass, quick release the pressure and open the lid. Taste and adjust salt to your liking. If you find the sauce is to much or to thin to your liking. You can set the pot again to saute and let it simmer for few minutes until the sauce reduce to your liking.
- Serve with some pitta bread or some vermicelli rice on side and enjoy!
