As you all can notice that I’m more of a chicken fan than a meat one. I love to try chicken with everything. I tried tones of recipes; I will be sharing these with you guys soon here on the blog!
It’s been crazy lately as I’m preparing my engagement and I have a lot of architectural work to do that I haven’t been able to focus on the blog 100%.
Maybe someday I will get to the point where blogging is the only work I do, I would love that!
But till then, I will try sharing my cooking passion with you as much as my time will allow!
Today, I remembered a recipe I tried before and I got very great feedback about it!
This wintery night and the cold breeze outside and the sitting around chimney made me remember this recipe and do it again, because it is perfect for those chilling times with family or friends.
Just imagine with me a glass of good red wine with some Italian smell coming from your oven, perfect!
As I said before, the protein base of our dish is going to be the chicken breasts with some great Italian homemade sauce.
It is really a simple recipe that requires no extra exotic ingredients. Actually the first time I came up with this recipe, I was at my best friend’s house.
We wanted to eat something delicious and healthy and no one had energy enough to go to the supermarket, so I did this recipe from scratch and it turned out great they couldn’t believe it is healthy AND all ingredients were sitting there in her pantry.
It is a delicious protein dish but not like all traditional chicken breast dishes, it is very moist and tender and looks beautiful, easy to prepare for dinner with some salad and some good carbs.
I like to cook hard dishes that need a lot of work sometimes, When I feel like I’m making a masterpiece, but as I and everyone know very well, we do not have enough time to spend in the kitchen, most of the time we need something quick and delicious to feed our family and move on to the next task we have.
For that, I always try to share quick and easy recipes that help you stay clean, healthy and fit, even if you don’t have time!
Keep it low carb and serve with some salad for dinner. OR for lunch carb load it with pasta or rice! If there are any leftovers, the flavors are even better the next day! Or you can freeze it for another night.
Transfer the cooled leftover into an air tight container and transfer to the freezer. The day of serving, thaw it out in the morning and bring to room temperature. Transfers to a skillet reheat over low-medium heat until warmed through. Or you can reheat in microwave.
Ingredients:
- 3 chicken breast
- Salt and pepper
- 2 Tbsp. olive oil
- 2 Tbsp. minced garlic
- 1 medium onion, cut into wings
- 1 medium pepper, diced
- 10 to 12 fresh mushrooms, sliced
- ½ cup pitted green olives
- 1 Tbsp. dried wild thyme (zaatar)
- 2 Tbsp. freshly chopped parsley (plus extra for garnish)
- 2 Tbsp. freshly chopped basil (you can use dry basil )
- 1 tsp. dried oregano
- 400 g diced tomato
- 1 tsp. sweet paprika pepper
- 1 Tbsp. honey
- Feta cheese (low fat )
- ¼ cup roasted walnuts
Instructions:
- Season chicken breast with salt and pepper
- Preheat oven over 250 C°, and cook chicken for 30 minutes
- Heat oil in a pan and drizzle some olive oil
- Add the garlic and cook until fragrant , around 30 second
- Add the onion and cook for 3 minutes
- Add the pepper and cook for extra more 3 minutes
- Add the mushroom and mix it all and cook for 3 minutes
- Add the honey and mix well the mix
- Add the thyme, parsley,basil,oregano and sweet paprika
- Add the green olives and mix
- Mix all the ingredients very good and add the tomato
- Mix well and leave it to stir for 5 minutes till all the flavors blend together
- Remove the chicken pan from oven, add the Italian mixture over the chicken sprinkle walnuts and feta cheese and return back to oven
- Reduce heat to 180 C°, and cook for 30 minutes
- In the last 5 minutes turn on the broiler for 2 till 5 minutes until it is golden brown
- Enjoy!
