Sardine Fish Cakes

Making your own food is always much healthier and better than buying stored meals!

I shared with you many times before easy recipes for the most delicious burger that we eat regularly outside but in a cleaner much healthier way.

Today I am going to share an easy and quick fish cake recipe.

And not just any fish, a very delicious and beneficial fish that we all have no idea how to use. And we need to enjoy it more often.

As I mentioned before, I haven’t had a lot of time to cook lately with my overload of work and preparations. So I came up with this easy and quick recipe that saves me time and money.

Money because buying a can of sardine is the cheapest thing you can buy and time because I prepare a bunch and store it to eat it later.

These easy sardine-fish cakes will surpass by far any ready-made and shop bought alternatives with no need for extra tools or skills to prepare.

Serve with some fresh green salad or 2 slices of French bread or in a burger bun. You should definitely try my homemade sauce that is perfect with them!

The sauce is easy: mix up 2 Tbsp. mustard; 1 Tbsp. honey; ½ Tbsp. chili sweet sauce; ½ tsp paprika

And sprinkle over your fish cake with some lettuce and tomato between two slices of French bread or in a burger bun!

Using a lot of superfood in this recipe instead of traditional ingredients to increase the benefits of food you’re eating and cutting of some serious calories and fat.

I used yoghurt and egg to moist the cake instead of using mayonnaise

And quinoa! That super food that I love to eat but don’t like in salad 😛 if you are same as me, this is the most perfect way to add quinoa to your meal more often and benefit from  it properly in your cooking in different ways than spreading it on your salad.

It’s moist, full of flavors, very delicious, and very easy to do!

In this version I fried the cake with some coconut oil in the pan but you can totally bake it in the oven! I tried it before and it worked perfectly and didn’t dry the cake out.

Just preheat oven on 180 C°, and set them on baking sheet and cook for about 20 to 25 minutes until slightly golden.

These fish cakes would be perfect for a family meal, and they are low calories, yes! but they certainly don’t lack in flavor and taste!

If you are cooking for one, like me, you can freeze the leftovers up to 3 months!

Perfect for your “fish on Friday “meals and the same can easily be adapted with salmon or tuna instead of sardines and even crabmeat! Why not? (I am going to be trying this last one very soon!!)

But I like to use sardines as much as I can because its health benefits are under-appreciated and need to be used more in our daily meals. Instead of buying chips and processed unhealthy food, next time you go to the supermarket but some sardine cans!

Ingredients: (serve 6)

  • 2 can of sardine in oil
  • 1 onion, diced small
  • 1 small batch of parsley washed and chopped
  • 1 small green pepper , washed and diced small
  • 1 egg
  • 1 Tbsp. Dijon mustard
  • 2 tsp. lemon juice
  • ½ tsp. paprika
  • Salt and pepper
  • ½ tsp cayenne pepper
  • 1 and ½ cup of cooked quinoa
  • 1/4 cup plain low fat yogurt
  • ½ tsp. dill (or aneth)
  • 1 Tbsp. coconut oil.

Instructions:

  • Mix all ingredients except oil in a medium bowl until wet dough is formed.
  • Heat oil on medium heat in a pan.
  • And cook each side of the cake for 4-5 minutes until lightly golden.
  • Remove from pan and line them on baking sheet to cool down
  • Serve and enjoy!
