These bites are so fun to make, it can be served and used in different ways.

This is a recipe inspired by buffalo chicken bites recipes but a lighter, healthier NOT fried Version.
The taste is impressively good; your guests won’t even tell the difference.
It’s soft, tender and moist bites.
The calories in these bites are insanely low so feel free to indulge.
The more exciting think is it can be store in fridge for months, and ready to go any time you have some unexpected guests.
Those bites can be a great additive in so many other recipes.
INGREDIENTS
For the chicken mixture:
- 1 cup shredded cooked chicken
- ¼ cup green onion (finely chopped)
- 2 Tbsp. parsley
- 3 gloves garlic (finely chopped)
- ½ tsp. salt
- 1 Tbsp. lemon juice
- ½ tsp. cinnamon
- 2 egg yolk
For the egg mixture:
- 1 egg white
- 1 Tbsp. water
For the coating:
- 100g oatmeal
- ½ Tbsp. chili powder
- ½ tsp. black pepper
INSTRUCTIONS
- Preheat oven to 190 ◦C
- In food processor, combine chicken. Green onion. Parsley, garlic, salt, lemon juice, cinnamon and egg yolk. Mix well and set aside.
- In a small bowl whisk together the egg white and water. Set aside.
- In another bowl mix well the oatmeal with the chili powder and black pepper.
- Scoop out chicken mixture and make 4 to 5 cm balls, first dip in the egg mixture than coat with oatmeal mixture. Repeat until you have about 15 balls.
- Place balls on sheet and bake for 20 to 25 minutes, until golden. *
- Serve with blue cheese or BBQ sauce.

Notes: * in the last 5 minutes of the baking turn on the upper griller of the oven so you reach that crispy golden look for the balls.
