Easy Shrimp and veggies pie

I  don’t know what is the secret in me that automatically connects fall season with pies.whenever fall is here , my pie baking mood is on ! and sometimes it extends with me until after Christmas.
pies for me are  comfort food whether sweet or sour.
my comfort food usually is a combination of warmth,deliciousness and beautiful food!
a dish that combines those 3 is just my baby!
and usually that kind of descriptions is usually connected with unhealthy junk food choices.
well! here that is not the case! 

 
don’t buy any of those frozen GOD knows what is in it pies! make this delicious shrimp pie fresh in your kitchen in less than 30 minutes and pop it in the oven and let the magic happen!

Easy Golden Shrimp and Veggies Pie

Ingredients
for the dough:
  • 3 cups whole wheat flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tbsp instant yeast
  • 1 tbsp brown sugar
  • 1 cup milk room temperature
  • 1/8 cup rapeseed oil
for the filling:
  • 1 /2 tbsp rapeseed oil
  • 2 medium onions chopped
  • 3 cloves garlic minced
  • 1 tsp ginger freshly grated
  • 1/2 cup green pepper cut into cubes
  • 1/2 cup red pepper cut into cubes
  • 1/2 cup yellow pepper cut into cubes
  • 2 medium carrots grated
  • 2 cup fresh mushrooms sliced
  • 1 tsp salt
  • 1 tsp coriander
  • 1/4 tsp black pepper
  • 500 g jumbo shrimps cleaned
  • 1/4 cup Parmesan cheese grated
for topping:
  • 1 egg yolk
  • 2 tbsp sesame seeds
Instructions
for the dough:
  1. mix the sugar , milk and yeast in a bowl a glass bowl and set aside.

  2. add to the food processor all the dry ingredients , close and turn on, while processing add the egg white , the oil and the yeast mixture keep processing until  you  have a firm dough .

  3. remove from processor, form into a ball , wipe with a little bit of oil , cover in a glass bowl and let it sit in a warm place , inside turn off oven with the light on or inside the microwave for around 30 minutes , until it double the size.

the filling:
  1. on medium heat, add the oil in a medium pan and add the onion and sautee for 2 min than add the garlic and mix until you smell the garlic , add the remaining veggies and cook it through for 5 minutes till the veggies are slightly wilted.

  2. add the shrimps , coriander and seasoning and cook it through while mixing occasionally. keep cooking until the shrimps are lightly pink  . you don't have to cook it completely. lower the heat and simmer for 10 minutes covered until the sauce dry out a little bit. Set the filling aside and let us spread the dough.

assembly:
  1. wipe your 30 cm circle baking tray with a little bit of oil.

    preheat oven on 180 C °.

    divide the dough into two equal pieces.

    roll it over until you have a large circle that is bigger than your baking tray by at least 5 cm all around the diameter.  

    put the first rolled part in the bottom of the tray and keep the edge outside .

    pour in the filling and spread it over . sprinkle the cheese on top of it .

    top it with the second part of the rolled dough and close the edge of the bottom and the top dough together .

    whisk the egg yolk and brush the top of the pie with it, .

    lightly cut the top dough with a knife . sprinkle the sesame seed.

    and put it in the preheated oven for 30 minutes till it is golden brown . 

    check it if it is not yet golden from the top leave it for extra 10 minutes while keeping an eye on it. the time depend from an oven to an other.

  2. remove from oven and let it sit for 15 minutes minimum before cutting.

    serve it with some salad and enjoy.

    you can store it in the fridge up to 4 days .
