Smart pot sautéed potatoes with soujouk (middle eastern sausages)
Humble potatoes are enlivened with a marvelous vibrant flavor of Soujouk. This sautéed potatoes with Soujouk recipe will make the perfect side dish or appetizer on your next dinner or iftar.

2tbspVegetable oil
1kgsmall potatoescut into quarters
½cupvegetable broth
200gSoujouk sausages thinly sliced
1medium onionthinly sliced
2tbsppomegranate molasses diluted in ¼ cup of water
2tbspfresh parsleychopped for garnish
Salt and pepper to taste
Instructions
Step 01: cook your potatoes
Set your smart pot to Sautee/ high mode for 10 minutes. Heat the oil. and add your potato slices. Sautee your potatoes for 10 min mixing each couple of minutes. Season with salt and pepper to taste. add your broth to the pot. Cancel Sautee mode. close the lid and set it to high pressure for 6 minutes. After the 7 minutes quick release the pressure and open the pot.
Step 02: add in the Soujouk sausages
Remove the potatoes from pot and drain while you prepare the Soujouk. Set your smart pot again to Sautee add just little oil because the Soujouk will release their fat later. And add the Soujouk stirring occasionally for 4 minutes until crumbly and crispy. Add the onion and continue cooking until they are transparent. Add the drained potatoes with the pomegranate molasses mixture and gently fold them until they are covered with the Soujouk and onion mixture and the liquid is evaporated.
Step 03: serve and enjoy
Transfer to your serving bowl and garnish with chopped parsley and you can also drizzle some extra pomegranate molasses on top. Serve beside your main dish or as an appetizer and enjoy!
Notes
Storing: you can store any leftovers after they cool down completely in fridge for up to 4 days Potato: you can use any kind of potato you like. If you use big ones cut into smaller cubes. And if you use those baby potatoes poke them few times with a fork before adding to the pot if you don’t want to cut them into half.
