this super-fast,fresh, Greek style burger is full of wholesome ingredients and very light on calories without sacrificing any of the smoked deep flavors and the juiciness. You can prepare it outdoor for you BBQ lunch party or indoor for your weekdays lunch or work lunchbox. Both cases make sure you enjoy it with my amazing red hummus spread, and the touch of lebanese zaatar on the chicken patties, heaven!

Ingredients
For the patties:
1kgchicken breastcut into smaller pieces (see notes)
Red onion ringscucumber slices, tomato slice, kale, parsley (see notes)
Instructions
For the patties:
In the food processor, add first the chicken and pulse until minced, then add all the remaining ingredients and mix on low than go up gradually until you have a big wet kind of dough.
Put the dough in a deep glass bowl cover it and let it rest for 10 minutes in the freezer.
For the hummus:
While the patties dough is resting, prepare the hummus. Rinse chickpeas and blend in a food processor with the sundried tomato until powder-like. Add garlic cloves, salt, paprika, cayenne and cumin and blend until smooth. While blending, slowly add the lemon juice than the tahini and add warm water IF you need too until the texture becomes smooth and creamy. Store in a closed glass container in the fridge until assembly.
For the assembly:
Chop all your veggies and prepare the buns so you can assemble easily.
Remove the burger patties dough from the freezer. Put some cold water with ice cubes in a bowl next to you, wet you hand and start making the patties. It is better to divide the dough to 6 equal parts than form each, so you can uniform patties. Bake in a preheated oven (200C) for 10 min. than remove from oven, flip and brush with the oil & zaatar mixture and put it back in the oven for extra 10 minutes. Then flip again, brush the other side and bake for extra 5 minute to infuse the zaatar flavor.
Spread some dried tomato hummus on the bun base add some onion, tomato and cucumber slices top it with the chicken patties and sprinkle some parsley leaves, close and enjoy!
Notes
You can buy minced chicken breast from any grocery store, if you don’t like to mince it in your food processor and just add it with all the remaining ingredients and mix. You can buy the chickpeas in cans, precooked. You just need to wash and drain before using but I always prefer cooking mine at home cleaner and cheaper. For the zaatar mixture: the zaatar we are talking about is different than thyme, it is the wild zaatar dried and mixed with sesame seeds, sumac, dry mint, salt and some seasoning that differ from area to area and from country to country. The same one you prepare with the “mankouche”. For a greater combination try using onion pickles instead of fresh ones it is so delicious, I like it more than just fresh onions, you can check the easy onion pickles recipe here! You can prepare all the ingredients and store them separately if you are meal-prepping like me and assemble the burger on lunch or the morning and take it with you to work, they will stay fresh for up to 5 days.
