“Keep Calm and Bake a Pie”

Homemade crispy pie crust with perfect filling is just what you need after a long day of work.
This healthy apple pie is good beyond words, by taste or by presentation!
Just look at those beautiful apple flowers.
Not overloaded by butter or sugar, the taste of apple in this pie really imposes. I tried the crust and was not really sure it would work out but it did obviously, my mum who is a big fan and believer in butter power in baking asked me more than three times : “ are you sure there is no butter in this?”
This is a sugar-free, gluten-free, dairy-free and vegan recipe.
I am a big fan of apples and pies, and I was always annoyed by the taste of sugar and butter in pies that kills every other taste in it, it is after all an APPLE pie so the apple taste should be dominant in it.
The apples by nature are sweet without adding unnecessary fat and sugar that mask its taste.
Everyone should be able to enjoy a big piece of apple pie without all those extra calories and without feeling guilty.
And even if you choose to add real sugar instead of the natural sweetener I used here, the sugar will still be less than half of the quantity used in traditional apple pies.
Needless to mention how beautiful it looks, what is better than celebrating a special occasion or after dinner dessert with friend than a beautiful healthy homemade apple pie?
And don’t think because it looks great it must be a lot of work, nope! Not at all! There is no excuse here ladies, this recipe uses basic ingredients that you can find in any house and in any super market and it is easily made with no special equipment needed, even in the smallest kitchens, I don’t have a big kitchen and I manage to cook everything in it.
Stop making excuses, and start the journey of loving your body and taking care of it before it is too late, all of this while not forbidding yourself from any kind of sweets or delicious meals you love.
Ingredients:(serve 12 slices)
for the crust:
- 1 1/2 cup Oat flour *
- 1/4 cup coconut oil (scoop-able)*
- 1/4 cup water (ice-cold)
- 1/4 tsp. sea salt.
- 1 tsp cinnamon
for the filling:
- 4 cups peeled, cored and chopped apples
- 1 tsp. lemon juice
- 3 Tbsp. honey *
- 2 Tbsp. cornstarch
- 1 tsp. cinnamon
- 1 tsp. fresh grated ginger
- 1/4 tsp. nutmeg
- 1/4 tsp. cardamon
- 1/2 cup walnuts
- 2 cups water (room temperature)
- 1/8 tsp. salt
Instruction:
- preheat oven 200 C˚
- mix oat flour, cinnamon and salt in a bowl .
- add coconut oil and mix with fork till a wet sand texture is formed.*
- add cold water spoon by spoon and mix gently until dough is formed. (approx. 3 to 4 Tbsp.) *
- spray pie tray (Ø =25cm) with coconut oil and spread the dough into even layer.
- bake for 5 minutes.
- for the filling: toss apple with lemon juice and 1 cup water , set aside.
- in a sauce pan, mix honey,spices and cornstarch with 1 cup water and blend well until cornstarch is completely dissolved.
- add apple mixture to the pan , mix well and cook over medium heat till mix start boiling (stirring frequently)
- turn off heat and add chopped walnut and mix well. and let it cool for 10 minutes.
- add the filling on top of pie crust and spread evenly, cut thin apple slices and decorate the top with apple flower.
- spray top with coconut oil and put back in oven for 40 minutes , until the top is golden brown.

notes:
*oat flour : you can ground oat into the blender and have homemade oat flour
*for the coconut oil it should be in solid form that you can scoop with the spoon and not liquid, it is very important :
*you can substitute honey with 1/2 cup of sweetener of normal brown sugar.
*wet sand texture should be formed by mixing with a fork the coconut oil and the oat mixture.
*you should be able to form a dough by adding cold water spoon by spoon
