It is a very easy soup to do and very nourishing especially for pregnant woman like me now , for kids and for all family member also because it is based on bone broth that add a lot of benefits to the soup plus the extra delicious flavor.

5 minutes pressure cooker dinner soup
Equipment
- pressure cooker or instant pot
Ingredients
- 1 tbsp vegetable oil
- 1 small onion, chopped
- 1 medium sweet potato , cut into cubes
- 2 medium carrots, chopped
- 1 medium green capsicum , chopped
- 3 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tsp dry oregano
- 1/2 tsp dry thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup wholewheat pasta ( cavatappi or anything similar)
- 3 cups homemade bone broth
- 2 bay leaves
- 1 tbsp fresh coriander, chopped
- 1 tbsp fresh mint, chopped
- fresh juice of 1 lemon
Instructions
- STEP 01: set the cooker to saute program and add the oil to heat. than add all your chopped veggies and stir for 3 minutes. add garlic and saute for a minute till you smell the garlic aromas. add the tomato paste and the dry herbs , spices and salt and mix it all together, add the pasta and the broth and mix. add the bay leaves .
- STEP 02: cancel the saute program. close the lid of the cooker , turn the vent into sealing position. Set the cooker to manual-high pressure for 5 minutes.
- STEP 03: after the time is done, let it naturally release for 5 minutes and than turn the vent to release the remaining pressure. open the lid , add the chopped fresh herbs and lemon and mix it together.
- STEP 04: taste for extra salt and pepper. serve and enjoy!
