imagine a dish that combines the earthy appeal of humble potatoes, the subtle sweetness of onions, the smoky embrace of eggplants, and the bold, intense flavors of sausages – and not just any sausages, but the beloved Lebanese sausage, “soujouk.” Each component plays its part in creating a harmonious symphony of flavors and textures, resulting in this beautiful Lebanese-style potato and soujouk salad.
This simple recipe is inspired by two Lebanese dishes merged into one: the Lebanese potato salad and the soujouk mezza dish. While traditional potato salads are typically dressed with spicy coriander and garlic sauce (known as potato harra) or olive oil, this Lebanese-style potato and soujouk salad features my famous roasted garlic tahini dressing, giving it a creamier, mayonnaise-like texture without the heaviness.
You can enjoy this recipe as a side dish that pairs well with most foods or as a warm and comforting meal in itself.

Lebanese-style potato and soujouk salad
Equipment
Ingredients
- 500 g small yellow potatoes cut into quarters. (I used half yellow, half red)
- 3 long eggplants cut lengthwise than cut into bite size.
- 1 medium red onion cut into wings
- 4 tbsp. extra virgin olive oil for frying
- Salt and black pepper to taste
- 200 g Lebanese sausages soujouk, cut into bite size

Instructions
- Preheat the air fryer on 180 ◦C. meanwhile wash and cut your ingredients.
- Add all the vegetables into the air fryer basket toss with olive oil, salt and pepper. And cook for 8 minutes, shaking halfway.
- Meanwhile prepare your dressing as per the recipe
- After 8 minutes add your chopped soujouk, mix with the veggies and cook for extra 10 minutes, until the soujouk and cooked through and crispy.
- Add to a large serving dish or bowl, add your dressing while the salad still warm and toss to combine.
- Garnish with some fresh chopped parsley, serve and enjoy!

- Serving and storing: Serve warm, chilled, or room temperature. Store leftovers covered in the refrigerator up to 4 days. Not freezer friendly.
- Potato: you can use any kind of potato you have available if you dn’t have this potato.
- Vegan option: you can skip the sausage and make this salad vegan, just make sure you air fry the veggies for 15 to 18 minutes until the potato are golden crispy.
- variations: you can still enjoy this recipe without any dressing at all because the soujouk spices will spice up the salad, but i highly recommend to make it creamier by adding my famous roasted garlic tahini dressing, the recipe is also here on my website check it out!
