- 280 ml warm water 1 cup + 2 tbsp
- 2 3/4 tsp active dry yeast
- 3 tbsp melted butter
- 3 1/2 cup wheat bread flour
- 1 tsp salt
Poaching:
- 8 cups of water
- 1/4 cup baking soda
- 2 tbsp brown sugar
Glaze:
- 1 beaten egg
- dash of salt
- 1 tbsp water
Toppings:
- coarse salt
- sesame seeds optional

Instructions
- STEP 01: mix the warm water with yeast in the bottom of the bread-maker (stand mixer or just simple deep bowl) and let it sit for 10 minutes until foamy. add the butter and mix a little bit with a wooden spoon. add the flour on the top of the mixture to cover it and lastly the salt. Make sure the salt is above flour not in contact with yeast mixture.
- STEP 02: Set to bread-maker to basic dough option and press start. the bread machine will work the dough, rest and rise it. after the program is done, press your finger in the middle of the dough it will leave a whole that is how you know it is ready.
- STEP 03: Remove the dough from the machine and form it into a rough big circle around 4 cm thick. divide the circle into 8 equal triangle pieces. Take each triangle and shape it into a rough circle shape with your hands. take all the rough edges and stretch and pull to the center, like you are making a flower shape. take all those edges and pinch them toward the center (like a bag). Flip it over, cup your hand over and round each piece up until you have a smooth ball. set on a lightly floured baking tray, cover and set aside to rest while preparing the other steps.
- STEP 04: Prepare the poaching solution. bring the water to boil, add the baking soda and sugar and mix to dissolve. drop the buns into the solution and boil for 20 seconds.after the 20 second pass Lift with a large slotted spoon and shake well all excess water and lay back into the baking tray leaving space between the buns because they will double in size while baking. Poach the buns 2 or 3 at the same time, don't over crowd the pan.
- STEP 05: Preheat oven on 200 degree C. Whisk together the egg, salt and water . Brush each bun top and sides well with the glaze. Slice a X on top of each bun with a sharp knife. Finish off with a sprinkle of salt and seeds.
- STEP 06: Bake for 20 to 25 minutes until golden brown and hollow sound when tapped in bottom. place on cooling tray and cover it with a kitchen towel to cool down for 5 minutes before serving. enjoy!
