- Cut the top off the head of garlic to expose the cloves.
- Place the garlic on a small piece of foil, drizzle with a little olive oil, and wrap it up.
- Roast the garlic in the oven for about 20-25 minutes, or until the cloves are soft and golden.
- Let the roasted garlic cool.
Prepare the Dressing:
- Squeeze the roasted garlic cloves out of their skins into the bowl of an immersion blender or food processor.
- Add the tahini, water, lemon juice, and all the other ingredients and seasonings.
- Blend until the mixture is smooth and well combined.
Taste and Adjust:
- Taste the dressing and adjust the seasoning, adding more salt, lemon juice, or sweetener if needed.
Adjust Consistency:
- If the dressing is too thick, add a bit more water if needed and blend until you reach your desired consistency.
Serve:
- Transfer the dressing to a container and refrigerate until ready to use. It can thicken in the fridge, so you may want to add a little water and stir to reach the desired consistency before serving as a dressing or keep it thick if serving as a dip sauce or spread in sandwiches.
- Drizzle this delicious Roasted Garlic Tahini Dressing over your favorite salads, use it as a dip, or as a flavorful condiment for wraps, sandwiches, roasted vegetables, and more.
