These Easy homemade jam crumble bars are sweet, buttery, crispy and full of delicious jam. You don’t need any special equipment to make and no fancy ingredients other that what you usually have in your pantry. With less than 10 ingredients and less than a hour you can make the most delicious bars

Ingredients
2eggs
½tsplemon zest
1tspvanilla extract
1 ½cupsugar
½cupmelted butter.
½cupvegetable oilneutral
1tspbaking powder
4cupsall purpose flour
1jar450g apricot jam (I used homemade one)
Instructions
First start by mixing the wet ingredients. In a deep bowl, whisk together the egg with the vanilla and lemon zest than add the sugar, oil and butter and whisk everything together until the sugar has completely dissolved and you have a smooth mixture.
We start adding the flour and mixing 1 cup at the time until you have a smooth buttery do, you might not need the whole 4 cups depending on the size of the eggs you are using. I used normal medium eggs and ended up using the 4 cups of flour to get that smooth buttery dough.
Remove a small part of dough (the size of the palm of your hand) wrap it in cling film and put in the freezer to use later to make the crumble top of the bars.
Then with we spread the remaining part in a baking tray (30x25cm) until you have a evenly spread layer of 1 cm thick.
Gently spread the jam over the dough leaving 1 cm outline without jam
Remove the dough part that we put in the freezer; it should be hard by now so you can shred it like cheese o top of the jam with a cheese shredder.
Bake in a 180 C preheated oven for 20 min in the middle rack of the oven until the edges are slightly golden brown. We turn of the heat and we broil for 3 min from the top. Keep a very close eye while broiling because we just want to give it a nice golden color from the top without burning it.
Remove from oven and let it sit for 15 minutes before slicing into bars.

Notes
You can use any kind of jam you like instead of apricot.These bars stay in perfect shape in room temperature for 4 days and for a longer time in the fridge (up to 1 week) and they are freezer friendly , you can freeze for up to 3 months and thaw in room temperature whenever you are ready to eat them.
