This bread’s colors and ingredients remind me a lot of my hometown in this season, all the trees are covered with a yellow and orange coat, everywhere you look all you can see is vivid colors that warm up your heart in this cold breeze of October. Missing that view so much now!
From this introduction I made I think you know by now why I named it fall bread, and for the sweet part because it is made with a lot of fall fruits from my hometown that adds a marvelous flavor to this bread.
A fancy flavor to start up your day with! With some white goat cheese aside and ripe pear, just heaven on earth.
Basically I tried it with almost everything from cheese to jam to honey and I love every version of it.
You can have it as breakfast that is my favorite way. Makes you feel fancy in the morning. 😛
And you can have it as a snack or before your workout to boost your energy, it has the perfect combo flavor of nuts and fruits with warm seasoning that will take you right to that scene I just described in the beginning with only one bite!

Sweet Fall Breakfast Bread
Serve 16 pieces
Ingredients:
- 200g of dried figs
- 5 Tbsp. Tahini
- 1/2 Cup plain yoghurt
- 4 ripe banana
- 2 eggs
- 1 ¼ cup whole wheat flour
- 2 tsp. baking powder
- ¾ cup of grounded almonds.*
- 1 Tbsp. flax seeds
- 1 apple grated.
- Seasoning mix of : ½ tsp. turmeric, 1 tsp. cinnamon, ½ tsp. ginger powder, ½ tsp. nutmeg
- 1 Tbsp. raw Almonds, chopped for garnish (optional)
- 2 to 3 pieces of dried figs cut into slices, for garnish (optional)
Instruction:
- Preheat oven to 180 C◦ and prepare the baking pan of 25 cm ⃝ by greasing a parchment paper and line it in.
- In food processor, place in at first step the figs, tahini, yoghurt, banana and eggs.
- Blend it all together until it is smooth and everything is combined.
- Add the dry ingredients: flour, baking powder, ground almonds, and flax seeds.
- Blend it all together till it is combined but try not to over blend it.
- In a small bowl mix the grated apple with the seasoning mix.
- Stir in the apple mixture and fold it gently in the bread batter.
- Pour in the mixture into the prepared pan and bake for 45 minutes, test it with inserting a wooden skewer if it comes clean it is ready to go.
- Remove and let it cool down for 20 minutes.
- Enjoy!
Notes:
*you can prepare the grounded almond by simply grounding some raw almond in the food processor.
*this bread stayed good for about a week in the fridge stored in an airtight container.
*you can have it with some goat cheese and slices of pear fruits, or you can have it with some jam or honey or anything you like for breakfast or for a snack.
