Eggplant Pizza Bites

It is not easy to get back on track after a long satisfying holiday. But we have too!

It is a perfect easy and quick recipe to slowly get back to the healthy routine and start losing those extra kg you added  while sipping those glasses of wine and eating those delicious Christmas feasts.

It’s very hard to go back to the healthy style and cutting suddenly all the yummies from your diet!

Honestly I can’t eat those dry plane food that are claimed to be healthy and are the reason why must of the people are afraid of healthy clean diet.

As I always say, healthy and clean diet doesn’t mean you have to eat dry, tasteless food that you to force yourself to eat it.

It is a healthy, low-carb, gluten-free and takes less than an hour to prepare. Don’t worry; plenty of cheese is still involved.

Psychologically speaking, you won’t feel that you’re obliged to go back to diet if you are starting with pizza! Right! You have to cheat yourself back to the healthy lifestyle! 😛

Eggplant pizza bites:

Serve 7

Ingredients:

 

100 g ground beef meat

1 small red pepper

1 small green pepper

1 small onion, finely chopped

1 garlic glove, minced

2 medium tomato, chopped into small cubes

½ Tbsp. tomato paste

1 medium eggplant

¼ cup ricotta cheese

¼ cup parmesan cheese, grated

¼ tsp. sweet pepper

¼ tsp. salt

½ tsp. cinnamon

½ tsp. dried thyme

1 small leaf Fresh rosemary


Instructions:

  • Preheat oven to 200 C°.
  • Wash and cut eggplant into 2cm thick slices.
  • Sprinkle eggplant slices with salt and let it sit for 10 min to help remove excess moisture of it.
  • Tap dry the eggplant arrange on baking sheet and bake for 10-15 min until cooked but not mashed.
  • Meanwhile, sprinkle pan with coconut oil, pour onion and cook on high-medium heat until meat is cooked through.
  • Add green pepper and cook for 5 minutes until vegetables are tender, add garlic and cook for 2 minutes.
  • Add tomato and paste and combine and let it all simmer on low heat for 10 min.
  • Remove eggplant from oven, top each slice with 2 Tbsp. approx. of the tomato meat sauce, and top it with a sprinkle of ricotta cheese and parmesan cheese, garnish with some olive and some chopped pepper.
  • Put back in oven, for 10 minutes and the last 5 minutes turn on the boiler from the top until the cheese is melted and golden brown.
  • Enjoy!
