So, why use chia seeds in jam?

These tiny seeds can turn any liquid into a thick gel. Chia seeds can absorb several times their mass in liquid which creates a gel-like substance in the process. This makes them perfect for jam making!

In this recipe, I used strawberry because It is my favorite and I try to avoid eating the canned jam available in all markets.

Feel free to experiment with any other berry or fruit of your choice! Don’t forget to send us pictures and feedback!!

This jam can be used as a topping in so many recipes. Here is how I used it as a topping for the very light cheesecake!

Strawberry chia jam:

Serves:  1 medium sized jar

Ingredients:

  • 1 cup strawberry
  • ½ cup water
  • 2 Tbsp. Brown sugar or organic stevia sweetener.
  • 2 Tbsp. whole chia seeds

Instructions:

  • Bring water to boil in a medium pan.
  • Add sugar to the boiling water and mix very good until sugar is dissolved in water.
  • Wash and drain the strawberry very good* and pour them into the sugar mixture.
  • Cook all the mixture on medium heat until the fruits break down and became syrupy (approx. 10min.)
  • Remove from heat and stir in the chia seeds and blend well.
  • Let it stand for 10 min than chill it in the fridge for at least 1 hour so the gelling power of the chia seeds is activated and the jam is thickened. *

* for the strawberry I like to cook mine without shopping them into smaller pieces, if you prefer you can make them as smaller as you want but don’t forget when it’s cooked it will melt into smaller pieces anyway.

* The strawberry chia jam can live up to 2 weeks in the fridge and up to 3 months into the freezer. I usually make 2 jar at the time keep one in the freezer while using the first one

* The calories in one serving is calculated with using brown sugar so it’s even lower than that if you are using organic stevia sweetener.
