I  don’t know what is the secret in me that automatically connects fall season with pies.whenever fall is here , my pie baking mood is on ! and sometimes it extends with me until after Christmas.

Pies for me are  comfort food whether sweet or sour.my comfort food usually is a combination of warmth,deliciousness and beautiful food!a dish that combines those 3 is just my baby!

And usually that kind of descriptions is usually connected with unhealthy junk food choices.well! here that is not the case! After all nothing healthier than homemade food with fresh ingredients.

Don’t buy any of those frozen GOD knows what is in it pies! make this delicious shrimp pie fresh in your kitchen in less than 30 minutes and pop it in the oven and let the magic happen! a hearty yet very healthy shrimp pie that will charm you from the first look at it!

The seasoning and vegetables inside the shrimp filling make this pie so moist and with a soft texture that you will enjoy with each bite.you can make it for a lunch meal prep or for a warm cozy dinner with friend or family.

It is a delicious heart filling meal that will leave everyone satisfied.so let’s gets this oven preheated and start baking some pie!

I made this recipe earlier in 2018 but I kept on trying different versions for the dough and the filling until I perfected! the recipe down below is the latest and best ever version.

Few notes that makes this recipe version the best:
  • Added few ingredients to the dough to make it more fluffy and moist. and let it rest to rise is also very essential for the end result.
  • I focused on making the dough layers very thin because it will rise and double in size when baked. so make sure you keep the dough layers thin , half centimeter thickness approximately.
  • the egg wash: adding the milk and instant coffee add much to the color.
  • don’t over crown the filling with to much veggies. I tried different combinations of veggies and this one is the perfect combo with the shrimp to bring out the flavors.
  • Cooking the veggies: you need to stir fry the veggies quickly and don’t over cook them to keep a little bit of the crunch in them, keep in mind they will coke further more in oven when baking.
  • I added the cream to add extra creaminess to the filling and keep it moist.
  • I used a combination of two type of cheese in the filling for extra flavor, you can skip the cheese for an healthier version but it is so delicious with them. A little bit of indulgence won’t kill anyone.
  • I tried this same recipe but with chicken instead of shrimp also , it goes very well also. Just replace the shrimp with chicken breast cut into bite size cubes or fajita strips.

Easy Golden Shrimp and Veggies Pie

Servings 8 pieces

Ingredients

for the dough:

  • cups whole wheat flour
  • ½ tsp salt
  • 1 tbsp active dry yeast
  • 1 tbsp brown sugar
  • 1 large egg white
  • 1 tbsp white vinegar or any vinegar you have work
  • 1 cup milk warm
  • 2 tbsp yogurt room temperature
  • 1/4 cup olive oil or any vegetable oil

for the filling:

  • ½ tbsp rapeseed oil or any vegetable oil of your choice
  • 500 g jumbo shrimps cleaned
  • 2 medium onions cut into wings
  • ¼ cup leek washed and thinly sliced
  • ¼ cup celery stick chopped
  • 2 medium capsicum any color of your choice cut into thin stripped
  • 2 medium carrots julienned
  • 1 tsp salt
  • ½ tsp ginger powder
  • ½ tsp curry powder
  • ½ tsp garlic powder
  • ¼ tsp nutmeg, freshly grated
  • 1/4 tsp white pepper powder
  • cup cooking cream
  • cup mozzarella cheese freshly grated
  • cup yellow cheddar cheese freshly grated

for the egg wash topping:

  • 1 egg yolk
  • 2 tbsp milk , liquid
  • 1 tsp instant coffee powder
  • 2 tbsp sesame seeds optional

Instructions

FOR THE DOUGH (by hand):

  • Mix yeast with half of the warm milk in a small glass bowl and set aside to bloom (make a foam skin on the top of the mixture)
  • Mix the dry ingredients together in a bowl (flour,salt,sugar)
  • Whisk all the wet ingredients in another deep bowl (egg white, vinegar, yogurt,milk)
  • Add the wet mixture to the dry mixture, add the bloomed yeast mixture and mix with a spatula .transfer to a floured clean space and knead till you have a smooth elastic dough.
  • Brush it with some oil , put in a deep glass bowl and cover with a wet towel and let it rest for 45 minutes till 1 hour , until it double in size. meanwhile, start preparing the filling

FOR THE DOUGH (BY MACHINE):

  • I have an automatic bread machine and you can use also a stand-up mixer with a dough hook.
  • Mix yeast with half of the warm milk in a small glass bowl and set aside to bloom (make a foam skin on the top of the mixture)
  • in the mixer or bread machine bowl, add the dry ingredients, than whisk the egg with remaining wet ingredients and add on top of the dry mixture in the bowl. add the yeast mixture and turn on your machine. for my automatic machine , I close and set the menu on program 28 (pizza dough) and after it is done I let it rest in the machine bowl until it doubled in size, the process is faster in my machine because it keep it in the right warm temperature to rise.
  • if you are using the stand-up mixer , just add everything like above and knead it until you have a smooth elastic dough. Brush it with some oil , put in a deep glass bowl and cover with a wet towel and let it rest for 45 minutes till 1 hour , until it double in size. meanwhile, start preparing the filling

THE FILLING:

  • On medium heat, add the oil in a deep skillet and add the shrimp. cook for 5 minutes until the shrimps are cooked through and turn pink. Add the onion, stir fry for 2 min than add the leek and stir fry for a minute. Than add the celery and stir fry for a minute. Than add the capsicum and stir fry for a minute. Than finally add carrots and stir fry for 2 minutes. just stir fry quickly we don't want to over cook the veggies and end up with mushy veggies keep in mind the filling will cook more inside the oven.
  • Add the salt and seasonings and mix it through till everything is coated.
  • Add the cooking cream mix and let it cook through for 3 minutes. turn off the heat and set the filling aside to cool down a little bit so we can spread it inside the pie.

assembly:

  • wipe your 30 cm circle baking tray with a little bit of oil.
    preheat oven on 180 C °.
    divide the dough into two equal pieces.
    roll it over until you have a large circle that is bigger than your baking tray by at least 5 cm all around the diameter.  the dough should not be thick , spread it to a thin layer ( half centimeter thickness )
    put the first rolled part in the bottom of the tray and keep the edge outside .
  • mix the two type of cheese and spread half the mixture on the dough. pour in the filling and spread it over . sprinkle the remaining cheese on top of it .
  • top it with the second part of the rolled dough and close the edge of the bottom and the top dough together .
  • whisk the egg yolk with milk and the instant coffee and brush the top of the pie with it. sprinkle the sesame seeds on top . gently poke the top dough with a fork or knife
  • Put the pie in oven and bake for 20 minutes in the middle rack until the edges get crispy golden brown color. for extra deep color, turn off the heat and turn on the broiler from top and broil until you have a golden brown color. Keep an eye on it it can get burn quickly, It won't need more than a couple of minutes.
  • remove from oven and let it sit for 15 minutes minimum before cutting.
    serve it with some salad and enjoy.

Notes

  • you can use any size of shrimp you like, make sure it clean, divined and pealed. you can use raw or freezer kind also but make sure you defrost and thaw before cooking.
  • you can mix and play with your choice of veggies, but I tried so many versions and combinations and this one is the best combo that bring up the flavors and enhance it. 
  • serve this pie with a coleslaw or quick Caesar salad as a side.
  • you can store any leftovers in the fridge for 4 days. 
  • if you had any leftovers of the dough you can fill it with some cheese or chocolate and bake it like the pie .
